Miso Banana Bread

No your eyes are not deceiving you… this is a recipe for Banana Bread with Miso in it. As disgusting as it sounds this is an amazing recipe I found in Food and Wine Magazine.

Ingredients:

  • 2 Banana – over ripped
  • 1 cup of flower
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • Pinch of salt
  • 3/4 Stick of butter (extra soft get it out of the fridge early)
  • 1/2 cup of sugar
  • 1/6 cup of Miso (that’s half a 1/4 cup)
  • 1/4 cup Buttermilk
  • 1 large egg
  • Cinnamon (optional)
  • Vanilla (optional)

 

Step 1:

Preheat oven at 350ºF. Butter a metal loaf pan (preferably non stick).

Step 2:

In a small bowl using a fork, mash the 2 pilled bananas until chunky.

Step 3:

In a medium size bowl whisk the flour, baking soda, baking powder and salt.

Step 4:

Using a stand mixer or whisk, cream the butter, sugar and miso until fluffy. Slowly add the buttermilk then beat the egg until incorporated. Beat in the Mash banana. Add the dry ingredient and mix until blended.

Scrap in to the pan.

Step 5:

Bake for about 30mn or until you can plunge a knife in the center of the cake and it comes out clean.
