A classic no doubt, a favorite at the bistrot or for dinner among friends. Everyone will add their special combo, I like my quiche simple.
Al the ingredients are standard in France but not in the US but fear not Trader Joe’s got your back:
- Pate Brisee / Pie dough
- 150gr Lardon (use the packaged pancetta from TJ) and ham
- 1 table spoon wine vinegar (preferably raspry wine vinegar)
- 1 thick slice of ham
- 125gr Creame Fraiche (available at TJ) you will use about half the container + milk
- 3 eggs
- 80gr gruyere (also available at TJ)
- pepper and nutmeg
Step1:
Preheat oven at 395 F
Step 2
Cook the pancetta in a pan, add a table spoon of raspbery wine vinegar. Dry on a paper towel to remove excess oil.
Step 3
Cut the ham in short strips. Mix the eggs, 50 gr of cheese and creme fraiche/milk mixture. Use a whisk so it fluffs a little
Step 4:
Place the pate brisee in a medium size tarte pan. poke it with a fork. place the lardon at the bottom. pour the egg mixture. put the rest of the cheese on top
Step 5
Place in the oven for about 40 minutes
