Rice Pancakes – I know it sounds weird! But when my room mate made it for me I felt like I would never eat regular pancakes ever again! These pancakes are light and easy to digest fluffy deliciousness.
Ingredients
- 1 cup cooked rice
- 1/2 cup Buttermilk
- 2 egg
- 1/4 tsp Baking soda
- 1/4 cup Flour
- 2 tbsp sugar
- 1/2 tsp Baking powder
- vanilla
Step 1:
Cook the rice
Step 2:
Separate the egg. in a medium size bowl mix with a wooden spoon the egg yolk with rice. Once the rice is fully coated with yolk, add the dry ingredients: baking powder, baking soda, sugar and flour. Once well mixed add the the butter milk and Vanilla.
Step 3:
Beat the egg white until stiff.
Step 4:
Slowly incorporate the egg white to the egg yolk mixture, without breaking the fluffiness of egg white, you want to really fold it into the mixture gently.
Step 5:
Preheat the pan over low heat. The pancake need to cook through. Add oil and wipe it with a paper towel so it is oiled through out without excess. pour a little of the batter ( they are better as small bite size pancakes than large plate size). When small air bubble can be seen on surface, flip’em!
