My Mother’s Chocolate Cake

This might come as a choc but as a kid I loooooved chocolate. So for my birthday my mother would make me chocolate cake. She changed the recipe through out the years to find the right balance between cooked & spongy vs dense & gooey.

Ingredients:

  • 4 eggs
  • 200gr sugar
  • 200gr dark chocolate (not too bitter)
  • 3 tsp coffee (optional) or cold milk
  • 150gr butter (soft – take it out of the fridge in advance)
  • 1 tbsp corn starch
  • 1 tbsp flour

Step 1:

Preheat oven at 300 F.

Separate the eggs. In a large dish Mix the egg yolk with the sugar until it has a smooth consistency.

Step 2:

slowly melt the chocolate in a bain-marie with the milk. It should become a smooth sauce.

Add the chocolate sauce to the egg yolk/sugar mix.

Step 3:

Add the very soft butter to the chocolate mix. slowly incorporate the flour and corn starch.

Step 4:

Beat the egg white until soft peaks form. Very delicately fold the egg whites into the chocolate mix.

Step 5:

Pour the mixture in a buttered cake pan. Cook in the oven for 20mn. Then another 20mn at 320 F.

Enjoy with whipped cream, ice cream or custard.
