Carrot Hummus

Easy to make and super flavorful. This dip is an instant classic when you have people over.

Ingredients:

  • 4 carrots
  • 1Tbsp virgin coconut oil
  • 3 Tbsp Tahini*
  • Small garlic clove
  • 1/2 lemon juice
  • 1/4 cup extra virgin oil
  • 1/3 cup of water
  • Paprika, salt and ground pepper

Step 1:

Preheat the oven at 350 F toss the carrot in small pieces in small cast iron with coconut oil and a little salt

Roast until soft and slightly brown

Step 2:

In a food processor combine the roasted carrots, tahini*, garlic, lemon juice, olive oil & water. Add a little paprika and pepper.

Process until smooth

 

*Note: you can make your own tahini by mixing sesame seeds with a little olive oil.
