Ah the warm comforting taste of curry… This dip can be used as a side with meat or just enjoyed with vegetables and crackers.
Ingredients
- 1tbsp extra virgin oil or coconut oil
- 1/2 cup chopped onion or shallots
- 1/4 cup chopped carrot
- 1/4 cup chopped celery
- 1/4 tsp curry powder
- 1/4 tsp garam masala
- 1/4 tsp ground cumin
- 1/4 tsp ground cinnamon
- 4oz red lentils
- 1 cup chicken or vegetable stock
- 1/2 can of coconut milk
- hot sauce – optional
Step 1:
In a medium sauce pan heat the oil. Add the onion until they become slightly transparent.Add the carrot, celery and a pinch of salt.
Cook over moderate heat stirring occasionally until softened and just starting to brown.
Step 2:
Mix the curry, garam masala, cinnamon and cumin in a bowl. Add the mixture in the sauce pan until fragrant.
Step 3:
Add the lentils make sure they get well covered with oil. Stir for a few seconds.
Step 4:
Add the chicken or vegetable stock and coconut milk. Reduce heat and let simmer.
The lentils should cook until gooey.
Step 5:
Take mixture off heat, let cool and put it in blender to make it a nice smooth dip.
