Toad in the Hole

My roommate once told me, you need a recipe to feed a man. This is her take on a family recipe with slight twist I added

Ingredients:

  • 7/8 cup Flour
  • Salt
  • 1/2 cup milk
  • 2 eggs
  • Fresh Thyme
  • 2 hot Italian Sausages
  • Beer (optional)

Step 1 – prepare the Yorkshire:

Sift into a bowl:

    • 7/8 cup of flour
    • 1/2tsp salt

Make a well in the Center, into which pour:

    • 1/2 cup of milk

Stir in the milk. Beat until fluffy:

    • 2 eggs (room temp is best)

Beat Them into the Batter. Add:

    • Fresh Thyme
    • 1/2 cup of water (I replace it by beer for better rise)

Let the mix rest in the fridge for at lease an hour or overnight.

Step 2:

Pre-heat the oven at 400 F.

Step 3:

In a skillet over medium heat, “unwrap” sausages (out of their casing) squeeze into skillet. Saute rapidly all the while chopping up the sausage into chunks. Once thoroughly cooked turn off the heat and set aside.

Step 4:

Once the oven is hot, get the Yorkshire out of the fridge and beat until bubble rise.

Bake in the oven for 20 mn at 400F and then another  10 mn at 350F or until golden brown.

Serve with Tomato sauce and a salad
